Storing Jerusalem artichoke in the ground gives the best results. Moreover, both in winter and in summer. If you grow this plant yourself in your dacha, then you can simply undermine the Jerusalem artichoke tubers as needed. And only in late autumn dig up that part of the crop that you intend to use during the winter. And leave the rest of the root vegetables in the ground until spring. Not only will it be perfectly preserved there, but by spring the tubers will have accumulated the maximum amount of vitamins that are so necessary for our body after a long winter.
For winter storage of Jerusalem artichoke, a cellar or cold basement is suitable. The main conditions for successful storage are low temperature and high humidity. Jerusalem artichoke tubers are well preserved if sprinkled with wet sand, just like carrots.
Even better results can be achieved if you dig up the Jerusalem artichoke root along with the tubers and, without shaking off the soil, place it in some kind of box or just in a bag. Then cover it with damp sand or soil. This method of storing Jerusalem artichoke is, of course, more labor-intensive, but you can store it this way all winter.
If there is no cellar, then you can use an insulated balcony. Even if the temperature there is often negative. Jerusalem artichoke is not afraid of repeated freezing and defrosting. At the same time, it does not lose its taste and beneficial qualities. It is successfully stored even on the street in piles. You can also store tubers in the refrigerator. Only in this case, they must be placed in a plastic bag or in any other hermetically sealed container. Otherwise, they will quickly wither, become soft and unsuitable for consumption.
Storing in the refrigerator is of course the easiest way. But you can preserve Jerusalem artichoke this way for no more than a month. It should also be remembered that this earthen pear cannot be kept in the light or in the open air for a long time.
